Chocolate Walnut Energy Bites

Makes about 18 walnut-sized bites

1 ½ cups walnuts

1 ½ cups dates, pitted and chopped

1/3 cup unsweetened cocoa powder

1 teaspoon vanilla extract

Pinch sea salt

¼ cup unsweetened shredded coconut

  1. In a food processor, grind walnuts. Add dates, cocoa powder, vanilla, and sea salt; puree until even and sticky.
  2. Transfer to fridge and chill for about 15 minutes. Roll into tablespoon-sized balls and toss in coconut to coat.
