Sweet Potato Hummus with Homemade Pita Chips

Yields about 3 cups

1 large sweet potato, baked and peeled

2 sprigs rosemary, chopped

1 tablespoon extra virgin olive oil

1 can organic chickpeas, rinsed and drained

3 tablespoons tahini

Juice of 1 lemon

1/4 teaspoon sea salt

Pinch black pepper

2 tablespoons extra virgin olive oil

1 teaspoon sweet paprika

  1. Combine sweet potatoes, chickpeas, tahini, lemon juice, sea salt, and black pepper in a food processor. Blend until smooth.
  2. Garnish with extra virgin olive oil and sweet paprika.
  3. Serve with pita chips.

1 package whole wheat pita bread, cut into 8 wedges each

1/4 cup extra virgin olive oil

1/2 teaspoon ground cinnamon

1/2 teaspoon sea salt

  1. Heat oven to 350F. Line baking sheet with parchment paper.
  2. Toss pita wedges with olive oil, cinnamon, and salt. Lay evenly on baking sheet; toast until golden and lightly crisped, about 10 minutes.
